Lentils

Lens Culinaris
Lentils (Lens culinaris) is an annual forb native to western US states (such as Idaho, Washington, and Montana) and has also been successfully introduced across North America as a non-invasive crop that can thrive in USDA Zones 3–10 as a cool-season annual. Reaching a mature height of 1–2 feet with a bushy, semi-erect growth habit, it features pinnately compound green leaves with tendrils and produces small white to pale blue pea-like flowers followed by flattened seed pods. It thrives in dry, well-drained loamy soils in full sun and is ideal for agricultural pulse production, soil nitrogen fixation, and green manure cropping.
